Chicken Sandwich with Lemon Tarragon Mayonnaise

Yield: 4 triangles

Ingredients:

1 roasted chicken leg, skinned and shredded
2 iceberg lettuce leaves, shredded
2 slices bread

For the mayonnaise:
1 egg, yolk only
½ tsp Dijon mustard
1 tsp lemon juice
Vegetable oil
1 tsp fresh tarragon, chopped
Freshly ground black pepper

Directions:

In a small bowl whisk together the egg yolk, mustard and lemon juice. Gradually whisk in enough oil until a thick mayonnaise consistency is formed. Stir in the tarragon and season with pepper.

Spread the lemon tarragon mayonnaise on the bread. Top one piece of bread with the lettuce and chicken. Place the other piece of bread, mayonnaise side down over the top.

Cut into triangles and serve.
